About this deal

During the Ottoman’s 300 year rule of Chios, it was worth its own weight in gold and incited jealousy and warfare. There’s a long history of mastiha in Chios, the crystals were rumoured to be used as an antidote to snake bites while in Ancient Greece they were so precious they were even used as currency. My companion, meanwhile, tucked into a very spicy Jerk Off the Bone burger, chicken with a jerk sauce that she rated really nice. The palate is sweet notes of liquorice and pine at first, then notes of pepper and lemon zest with a hint of scented wood.

If you want a European spirit that is, you’re better off with Becherovka, (Czech) But Axia soars at the heart of a Bloody Mary, as it’s core flavours blend well with horseradish, Sherry, tabasco etc.Axia is perfectly drinkable neat on the rocks but as I was soon to discover it also makes an excellent base for cocktails.

oz Axia into a chilled wine glass, add ice cubes and top up with 5 oz Fever-Tree Mediterranean Tonic. Please always read the labels, warnings, and directions provided with the product before using or consuming a product. Pearls of mastic are harvested from native trees on the island and distilled to make this herbal, fresh, slightly sweet liqueur which gives flavours of pine needles, gnocchi, imperial mint, and a touch of anise. I particularly like the creative packaging, with both the name and bottle paying homage to the spirit’s past traditions.

Hippocrates recommended mastic resin to prevent digestive problems, colds and as a breath freshener. The dried resin crystals are harvested and cleaned by hand, then double distilled before being bottled without any sweetening. Cover the tumbler rim with some salt before mixing all the ingredients in a shaker, give it a good shake and pour the contents over ice for the perfect Margarita. Axia Spirit | 150ml Fever-Tree Mediterranean Tonic Pour Axia into a chilled tall glass, add ice cubes, and top with tonic. Nicknamed “Tears of Chios,” it imparts distinctive herbal, citrus and pine resin notes when it is dissolved in an alcoholic spirit.
