Description

Today I have a spin off of the original Green Bean Casserole. While the traditional version is fabulous, especially on a holiday {hello Thanksgiving!}, it is always a good idea to change things up. I have to admit that I hadn’t thought much about Green Bean Casserole until about a month ago when we were invited to a friend’s house for dinner. They served it with tri-tip and it was SO good. Of course, I couldn’t leave well enough alone and so I decided to come home and try to make a variation. Friends, it was a great idea because this Frozen Vegetable Casserole is delicious. Absolutely! I would suggest steaming the fresh vegetables in the microwave for a couple of minutes before adding them to the casserole first.

From mixed veggies, to chopped spinach, cauliflower and broccoli mixes, to sweetcorn and peas you’ll find it all here, frozen and ready to go at a moment’s notice. While vegetables are an essential part of every meal, you’ve got to have something to go with them, and we’ve got lots of options to suit. Make Ahead Instructions You can use fresh over frozen vegetables. Before using them in this recipe, blanch them in boiling water until tender, then drain and pat dry. Also, adjust the baking time. Any leftovers will keep in the refrigerator for up to 4 days. Reheat the casserole in either the oven or the microwave and enjoy.Cream of Mushroom Soup: You can use homemade or store-bought – I prefer homemade just because you can control the amount of salt and fat that goes into it, but canned soup works just fine. Top the vegetable mixture with a hearty layer of Parmesan cheese. Making sure that it is evenly distributed over the top. Versatile ingredients– As it calls for a variety of vegetables, you can easily swap in or out different frozen veggies based on what you like or have available.

Sharing is Caring

For this vegetarian casserole, I’ve found that frozen veggies work great – there’s no need to thaw or pre-cook them as they cook to perfection while baking the casserole. Plus, they’re frozen at the point of peak freshness, so they have kept their nutritional benefits. You can use fresh vegetables if you prefer, but for a budget-friendly recipe, frozen is the way to go. Ingredients Needed Crunchier casserole– To achieve a more crispy, crunchy texture, you can sprinkle some additional crispy fried onions on top just before serving. Rice – Serve the frozen vegetable casserole over a bed of white or brown rice to make it even more filling.
